Mushroom season in Bergen. Potato mash with traktkantarell

I have to confess - I am a huge mushroom lover. I love to pick them, sort them, cook with them. Bergen makes a perfect place to live for someone holding such a hobby.

Today I would like to share with you a recipe which works with any mushroom (see, some which you need to boil before making the recipe). A potato mash with traktkantarell (also known as yellowfoot or funnel chanterelle). A browner cousin of known orange chantarelles :) For two foodies you will need:

  • Traktkantarell (or any shroom - make it champingnon, boletus, chanterelles etc.) about 300-400 grams

  • Potatoes about 800 grams

  • A teaspoon of Ghee butter

  • Fresh thyme

  • Coconut milk

  • Onion (optional)

  • Salt

  • Pepper

  • Parmiggiano or other hard cheese

  • Greens such as dill, parsley or spring onion

  • A splash of milk

1. Unlike many food blogs which recommend lightly removing dirt cantarelles without water, I do not manage to "wash them" without water. I just soak them in cold water and use a drainer to get rid of dirt, which we brought back from the forest. I do not cut the chantarelles a lot, as I prefer to feel and see the texture while eating. If you have bigger mushrooms i.e. boletus or champignon, i would cut them.

2. I peel the potatoes, roughly cut them and let them boil in slightly salted water.

3. Roughly chop the onion.

4. Add a tablespoon of ghee to the frying pan and add the onion. Once slightly sautéed add the shrooms.

5. Once the water from shrooms evaporated, add thyme, salt, pepper. If you are using spring onions, now would be the time to add these as well.

6. Reduce the heat and pour coconut milk (by your own tasting). Let it simmer a bit on lower heat.

7. At this time, check the potatoes, they probably are boiled.

8. I remove some water from potatoes and mash them with a manual potato mashes (I use one from IKEA).

9. Once mashed pour milk, add herbs and mix well. Taste and add salt if needed.

10. Ready to serve! Add some mash to your bowl, pour mushroom sauce on top, add Parmigiano cheese to top it off for delish serving.
